SPIRITS

From beginning to end, all of our spirits are produced right here on our farm in Goshen, New York, WHERe WE grow, harvest and malt all of our own grains. We also mash, ferment and distill, AGE and bottle on-site.

AGED SPIRITS

 BOURBON WHISKEY

Our first aged spirit usually follows the same grain bill as the corn whiskey. This base spirit is typically aged in a 15-gallon barrel for 2 years or more, a process which gives it beautiful color and distinct flavors derived from the natural oak- tannins. This whiskey noses initially of dried hay or tobacco - reminiscent of the corn - before molding into the barrel notes of caramel, butterscotch, and even praline. These borderline “sweet” notes make way for a baking spice-like finish.

 RYE WHISKEY

Like our bourbon, this spirit keeps the same grain bill as its unaged equivalent and is typically aged in a 15-gallon barrel for 2 years or more. Those same beautiful spicy, herbal notes pull through after aging, but they are accompanied by notes of charred cedar chip and vanilla. The phenomenally smooth mouthfeel of the earth and barrel-tannins combine to make an easily sippable whiskey.

 HONEY WHISKEY

Our used Bourbon barrels are filled with honey, sourced from our farm, and then left to rest for several months. Then the honey is dumped, and the barrel filled again with Corn Whiskey to age for two years or more. What you get is a wonderfully aged whiskey with a hint of honey to linger on the tongue and nose.

 MAPLE WHISKEY

Imagine taking the same idea as the honey whiskey only doing it with local organic maple syrup, a used rye barrel, and the unaged rye whiskey. Well, that is exactly what we have done with our Maple Whiskey using Finding Homes Maple Syrup from Greenville, NY. This spirit drinks subtle of the maple itself, picking up hints here and there, holding closely to that

PEATED SINGLE MALT WHISKEY

Our oldest aged spirit begins when our single malt base is aged in 10 or 15-gallon barrels and is aged for 2 years or more. It begins like an Islay scotch, boldly earthy and smoky - a thick peaty body. As the spirit begins to settle on your tongue it will garner more of its natural barley character, finishing like a lowlands scotch, a tea-like or grassy herbal-ness.

SINGLE MALT WHISKEY

100% estate malted barley whiskey aged on new American charred oak for over 2 years.

BARREL AGED GIN

Our Gin aged in our own peated single malt whiskey barrels. The beautiful marriage of smoke and herbs.

CLEAR SPIRITS

 SUGAR BEET VODKA

Where it all started for us. These large white beets make up 100% of this spirit, each bottle taking roughly six pounds to create. The high level of congeners  that this vodka retains gives it a phenomenally aromatic nose and taste. Nosing true of the earthy beet, with hints of banana peel as well as raspberry fruit and leaf. This earth complexity carries over to the taste, which with a smooth, palate coating mouthfeel, forms a perception of “sweetness”. Great for Sipping.

WHEAT VODKA

Originally devised to act as a more neutral mixing vodka for Brown Barn Farms. This spirit is 100% wheat in its make-up and is distilled various times to diminish the congeners. Although it is more restrained in its aroma and taste, the wheat vodka does withhold that almost-signature earthy mouthfeel. It lends itself beautifully to the cocktail, due in part to its subtle grassy, grainy body.

GIN

At the base our gin is made from 80% corn and 20% wheat. Built upon layers of botanicals, a blend of cedar juniper, angelica root, green coriander, citrus mint, lemon balm, staghorn sumac, and lavender. Our gin has a mild complexity about it - a thicket of herbal and grassy-notes, followed by streaks of floral, earthy, and even anisette -none of which are particularly ‘in your face’.

ABSINTHE

Our wildest expression yet. Distilled from rye grains and select botanicals including wormwood, star anise, coriander and dried blood orange peel. You’ll notice black licorice mixed with a bit of an herbal and citrusy aroma.

OCD CORN WHISKEY

This whiskey is 85% corn and 15% malted barley, being high corn, it has a distinctive grassiness to it. This creates  canvas for the beauty of the Black Dirt to shine through, in the form of a dense organic matter, or earthy, overtone. On the palate the hot grassy ethanol pulls through initially, before ending on a lovely, sweet corn or even creamed corn note.

 UNAGED RYE WHISKEY

Each whiskey derives its own unique character from the grains used to compose it. In our rye whiskey’s case, it is 100% rye, of which 15% is malted. Being entirely rye, this whiskey has a wonderful herbal - white pepper or arugula - spiciness to it. This is contrasted by an equally wonderful, and smooth, mouthfeel, which makes for a truly sipable white whiskey.

  UNAGED SINGLE MALT WHISKEY

Clear unaged  whiskey made of all estate peat smoked malted barley.  Similar characteristics to Mezcal.   The peat is harvested off of our own peat fields.  The peat is sundried for several months.  Once dry it is added to our grain smoke house where we burn it.  We channel the smoke into the malt storage room and for up to 48 hours we allow the smoke to make contact with the malt.

Pennings Apple Vodka

Collaboration between Pennings Orchard of Warwick NY and Orange County Distillery.

Pennings Orchard produces a sweet and juicy hard cider packed with local flavor which Orange County

Distillery distilled 4 times to create a clean sipping vodka with a hint of apple and caramel flavors.

Always apple season with this vodka. This sipping vodka is best served cold. Try in a cosmopolitan.

Valkyrie Coffee Vodka

Collaboration between Valkyrie Coffee Roasters of Chester NY and Orange County Distillery.

Farm to still meets farm to roaster. Using estate grown grains and specialty coffee sourced directly from

the microlot in the Cerrado region of Brazil, Orange County Distillery and Valkyrie Coffee Roasters

teamed up to make a coffee flavored vodka. This spirit is clear with all the true flavors a coffee vodka

should have. On ice alone or in an espresso martini. Serve cold.

Applewood Gin

Collaboration between Applewood Winery of Warwick NY and Orange County Distillery.

The base of this gin is apple cider, then a final distillation with Orange County Distillery’s gin botanicals. Floral, herbal and sweet

on the palate. On ice alone or in a Gimlet garnished with an apple slice.
